Salsa: The Unspoken Hero

Good salsa can make or break a meal. With such a wide range of flavors, salsas are the de facto x-factor of Mexican cuisine. Whether it's a tangy tomatillo-based salsa verde or a deep-roasted salsa ranchera, there is so much to love! Its long history traces back to Aztec and Mayan civilizations and its variety of divine flavors are tailored to complement our most historically important dishes; this is why it has remained such a staple in Mexican culture to this day.

Salsas have been dated back as far as the 1300s but were first given their name in 1571 by Franciscan Cleric Alonso de Molina, who published the first dictionary of an indigenous language from the Americas (Aqui comiença vn vocabulario enla lengua castellana y mexicana). The earliest observations of salsa mention its use as a condiment on meats and seafood for enhanced flavor and acknowledge its apparent health benefits. Not only do salsas taste incredible, but they are also low in calories, stabilize blood sugar, and help you burn fat.


These days a lot of people view salsa as a chip dip when in reality it is so much more. Salsas are most commonly associated with Mexico, but most Latin American countries have their take on salsas as well, including the creamy Peruvian aji Verde made with parmesan or spicy Chilean Pebre which is most commonly used on bread. Some could even argue chimichurri is Argentina's salsa as it has a similar base to most, using chopped parsley and/or cilantro, garlic, and spices.
